Zuccancakes or Zucceggs

My kids used to eat toast, toast, and more toast with a small side of fruit for breakfast.  Since eating primal we have substituted toast for eggs on most mornings.  They of course enjoy plain old scrambled eggs, sometimes I add cheese.  They also enjoy what my son calls flat eggs, which is over-easy.  More recently I discovered something even better that they just loved.  They are basically zucchini eggs.

Here is my recipe in short:

1 Zucchini, grated

2 eggs

Cheese, grated (about half the amount of the grated zucchini) I like to mix in some parmesan for extra flavour.

Salt, pepper, or any other seasoning to taste.

Mix it all up in a bowl.  On a hot griddle drop spoonfuls and flatten slightly so it’s about 1/2 an inch thick.  Once cooked on one side, flip it over and cook the other side, kind of like a pancake.  It’s that easy!  and yummy!

Eggs are so versatile, get creative.  My kids are picky when they can see veggies in their food so I often try to disguise them.  Last night I made a cauliflower mash with garlic, delicious on it’s own, but I had a small bowl leftover, so this morning I mixed the mash with a few eggs until it was smooth and creamy, scrambled it up just like scrambled eggs and they gobbled it up without a thought that it was anything other than scrambled eggs.

We add a side of fruit every morning and they are happy boys!
